| From green to white because Slovenes love milkLjubljanske mlekarne (Ljubljana Dairies) is the largest producer of milk and the largest seller of milk and milk products in Slovenia, where milk has been one of the most important sources of nutrition for centuries. Even the Middle Ages, the Slovene diet was especially enriched by cheese and cottage cheese, without which still today it is impossible to imagine many of our national, everyday, and holiday dishes.
In many places in Slovenia today, these dishes are prepared with milk and dairy products from Ljubljanske mlekarne. The company buys more than 400 thousand liters of raw milk every day and processes it into pasteurized and homogenized fluid milk, yogurt, variously flavoured cheese spreads, long-life UHT milk and milk drinks, ice cream, butter, cream, and cheeses. With well-designed and successful trademarks such as Alpsko mleko (“Alpine Milk”), now a synonym in Slovenia for all UHT milk; with ice cream products such as our extruded ice cream novelties which have 16% market share of all the ice cream sold on the Slovene market; and with various other well-known quality products, Ljubljanske mlekarne has been proving for many years that it knows what its customers in Slovenia and in several foreign markets really like. With quality, naturalness, and the preparation of ever new surprises from the dairy kingdom, Ljubljanske mlekarne has successfully achieved an almost 40% share of the Slovene market. Low-fat and skim milk The milk that Ljubljanske mlekarne has bought and processed since 1956 has improved every year-over half of the milk now purchased ranks in the extra quality class. Supplied to more than eight thousand stores across Slovenia, our milk is offered with various butterfat levels from whole milk (3.6%) to low-fat milk (3.2% and 1.6%) and skim milk with only 0.5% butterfat. Ljubljanske mlekarne was the first to offer low-fat and skim milk to consumers in Slovenia. Variety in small cups Yogurt is one of the oldest dairy products. The first natural solid yogurt that Ljubljanske mlekarne began producing in 1957 has today been joined by fruit and dessert yogurts in small cups and the increasingly popular liquid yogurt in Tetra Pak(TM) cartons. Sour cream and sweet cream with various butterfat levels are also among our most popular dairy products. Our modern production lines produce more than fourteen million liters of various yogurts and more than four million liters of sour cream and sweet cream annually. Cool dairy pleasures In 1958, Ljubljanske mlekarne became the first in Slovenia to begin the mass production of ice creams that always have the same controlled quality and guaranteed purity. Along with ice creams on sticks, among which the most popular today is our rich creamy Zlatorog brand, we also produce various ice creams in small cups as well as family-size and catering buckets, ice cream snacks, and ice cream cakes and rolls. Our rich offer also includes ice cream for diabetics. For many years, Ljubljanske mlekarne was the only mass producer of ice creams in Slovenia and is still today the largest producer. A long cheesemaking tradition In Slovenia, various cheeses have been an important part of the menu for centuries. Until the second half of the 19th century, the farmers made cheese using simple domestic methods. Along with the cheese produced in the high alpine pastures, the cheese produced by several monasteries was famous. The cheese plant beside the Stiena monastery that today belongs to Ljubljanske mlekarne has special significance. Here, a variety of semisoft cheeses are ripened, among which the most prized—Stiena and Benedikt with its thick rind—are still tended in the same manner used by the monks for centuries. Along with the hard and semisoft cheeses from Ljubljanske mlekarne’s three cheese plants, our high quality cottage cheese and various cheese spreads are also very popular in Slovenia. Cottage cheese in particular is a very important component part of struklji, pies, rolls, potica and other typical Slovene specialties. A many-coloured rainbow of quality products A belief in the power of nature is the foundation of all products from Ljubljanske mlekarne, which summarizes all its achievements with the slogan "From green to white". However, the variety of its quality products does not depend merely on milky whiteness but offers many rainbow shades. Among the interesting additional products from Ljubljanske mlekarne there are non-alcoholic beverages as well such as iced tea (Ledeni Caj). Just as Ljubljanske mlekarne was the first with ice cream, it was also the first to offer this refreshing drink to the thirsty in Slovenia. Today there are many iced teas on the Slovene market, but those that Ljubljanske mlekarne produces on the basis of rosehips and enriches with the flavours of passionflower, peach, and wild cherry are still among the most popular. |
